How we do guacamole in Casa de Chiles?

Our secret recipe is:

  • 5 ripe / creamy avocados
  • 2 tomatoes (but not too soft)
  • 1 onion
  • a bunch of coriander
  • salt
  • lemon juice
  1. Cut tomatoes in small cubes (around 5 mm)
  2. Cut onion in small cubes (around 5 mm)
  3. Cut the avocados by half, remove the seed. Scoop out the avocados into a plastic bowl.
  4. Add tomatoes and onion.
  5. Using a sharp knife, start cutting the avocados and other ingredients, turning the bowl around
  6. The perfect guacamole has small chunks of avocado, never use the blender!
  7. Add chopped the coriander, you can cut it with scisors
  8. Mix all and add a spoon of lemon juice and a half of tea spoon of salt
  9. Taste it and if necessary, add more salt and/or lemon juice.
  10. Serve with natural tortilla chips, enjoy!
