The Michelin Guide has arrived in Mexico, and in a few months, we will be able to visit the Michelin-starred restaurants.

You may have heard about the most prestigious recognition bestowed upon restaurateurs: the famous Michelin Stars. For over a century, these stars have been a symbol of culinary excellence and are awarded to high-end restaurants.

Now, the best Mexican restaurants will have the chance to qualify for these legendary stars. The Michelin Guide has come to Mexico to recognize and promote the most innovative and delicious culinary offerings. Here are the details.

In fact, the inspectors have already traveled through Mexico City, Los Cabos, Oaxaca, and Nuevo León, and we will be able to learn the results in early 2024. According to the Guide Michelin, Mexican cuisine is making use of chiles, herbs, corn, coffee, agave spirits, seafood, and other local ingredients.

Mexico is now on the radar of gastronomic inspectors, and it’s worth noting that the traditional French guide adds more cities each year. For example, in 2023, Atlanta, Georgia, Colorado, Argentina, Rio de Janeiro, and Sao Paulo were included.

 

Michelin Stars

The origin of this distinction dates back to the creation of the first Michelin Guide in 1900 by the Michelin brothers, André and Edouard, who founded the tire company of the same name. Initially, the guide’s purpose was to stimulate the demand for automobiles and Michelin tires.

The first Michelin Guide included maps, tire repair instructions, and a list of restaurants, hotels, mechanics, and gas stations along popular routes in France.

However, it was in 1926 that the first Michelin Stars were awarded to restaurants located exclusively in France, marking the beginning of a rating system that has remained in place to this day. Over the years, this restaurant section in the guide gained recognition, and the Michelin brothers incorporated a team of anonymous, masked gastronomic critics, now known as inspectors.

The methodology is based on five universal criteria to ensure fairness in the selection of each destination:

  • the quality of ingredients,
  • mastery of flavors and culinary techniques,
  • the chef’s personality in the kitchen,
  • flavor harmony,
  • and consistency in visits.

Inspectors evaluate in complete anonymity and are experts with years of experience in the food, restaurant, and hospitality sectors. They assess only what reaches the plate, including the product quality, culinary skill, personality in the kitchen, value for money, and menu consistency throughout the year.

The rating system consists of three levels:

  • One Star represents a very good restaurant in its category, offering consistently high-level cuisine.
  • Two Stars indicate excellent cuisine with elaborately prepared dishes and exceptional quality.
  • Three Stars reward exceptional cuisine where diners enjoy a magnificent culinary experience, with precise dishes using superlative ingredients, justifying a special journey to visit the restaurant.
